I have searched everywhere but cant find decent info on the different joystick operating modes (Junior,Senior and Advanced).
Does anyone know the differences please?

Its quite simple as the diagrams show.
The Junior has a slower curve for inputs, not as sensitive at first, while the Advanced is more direct.
You would need to push the joystick more to get the same effect on Junior.

Yes as shark says mate, and to simplify it even more junior mode will give you all round slower speeds and imput controls, senior will increase the all round speeds a little bit more, then advanced will give the drone the maximum all round speed and control imput speeds, (its not as fast drone even on advanced settings though)
